Reissdorf Kolsch 3

An easy beer to pick up brewing after not being able to for a long while

Brewer’s Notes

Ran this batch on the stove, using partial-mash technique. Started mash at 160F, dropped to 156F after doughing in. Let sit, so may have cooled too much, was at 148F at end of mash. Pre-boil volume shouldbe 2.8gal, gravity was 1.070 at 155F, so added 50z of light DME to raise to 1.097. Boil started at 212pm.

After boil, had 1.050 at 82F, added 2.25gal water to vaise ferment volume to 5.125gal.

Wort is light gold color, not very bitter. Malt front, mellow sweetness and bready.

OG: 1.050 @ 82F, target 1.054
FG: 1.012 @ 68F, target 1.010

7.9.2017 – 1.012 @ 68F – Racked to secondary. Color is a bit dark for a kolsch. Fruity, fry flavor, maybe clove? Getting more flavor from hops than expected, use of EKG likely the culprit here. Missing traditional flavor, but should be good once cold & carbonated. In 2ndary with 68F target temperature. Aroma is mild, more malt-forward. Cardboard on nose?

Secondary

Target Temperature range: 68F
Average: 67.89F
Standard Deviation: 0.09

Kolsch3_Secondary

7.23.2017 – Drinking! Racked into keg on 7.17 and carbonated at 14psi. Lightly fruity from the EKG hops, does not have clean sharpness associated with kolsch. Fairly cloudy still, quite a lot had settled in carboy. Very drinkable, but need to use correct hops next time.
