Cascade / Citra IPA
Using the last of the VT yeast, a brighter IPA
Brewer’s Notes
After the disaster that was the first Cascade IPA from the east-coast hops, we’re trying a simpler recipe with less hops and try to balance it with Citra. Also have a new fermenter to try out.
OG: 1.052 @ 72F, target 1.059
FG: 1.010 @ 73F, target 1.012
Grassy aroma, very high suspended solids. Color is burnt orange / umber, a little darker than beersmith calculated. Wort is well-balanced, not as sweet as expected. Grapefruit, lasting citrus finish. Rind / Pithy notes, but not as astringent.

1.29.2018 1.010 @70F
Very cloudy, same burnt color. Grapefruit, chlorine?, apricot in aroma. Sweet citrus taste with orange, grapefruit. Seems to end with Chloramine, but there should not be any. Does finish cleanly. Added 1 oz Citra for 3 day dry hop.

Apricot aroma, still seems to have Chloramine. Dry hop did not seem to change much. Had hoped it would remove some of the flavor, but it hasn’t. Citrus, similar to previous notes. Now getting more apricot on nose. Putting in kegerator to force carbonate, set to 14psi.
Ended up dumping about 50% of this keg in the spring – it was an OK beer, but nothing really special.
